Hanna Instruments HI-99163 is a pH and temperature meter designed for meat processing. An important factor in the field of meat science is a reliable pH measurement. The pH can affect many quality factors e.g. grading, tenderness, colour, texture and process characteristics. The best way to determine the pH in meat is direct into the depth of the muscle.

The HI-99163 is supplied with an FC2323 probe which is specifically designed to measure the pH in meat processing. This meter works in cold environments operating temperatures to 0℃. More features include a waterproof compact casing, automatic pH calibration at one or two points and a large dual-line display. The HI-99163 and FC2323 electrode are ready for pH measurements in intact muscle.

The FC2323 has a conical sensing tip and a penetration style pH electrode. This probe is made of PVDF, easy to clean and has a single junction gel-filled reference with a free diffusion sleeve style reference junction. A removable stainless steel knife for meat/muscle penetration (FC099) is available to buy separately for the FC2323 probe.
